AVOCADO BLACK BEAN SALAD

Over the course of the year we will be featuring many of the personalities and characters that help to make Mustique the laid-back paradise that it is. So many of the people who live and work on the island are the reason why guests return year after year. We start with Jerrol John, chef at Sienna, who trained at the Institute of Hospitality in Barbados and whose skills and flavour combinations have evolved on Mustique and continue to delight guests to this Italian-inspired villa.

AVOCADO BLACK BEAN SALAD

Serves 6

Ingredients:
2 avocados, peeled, pitted and diced
1 large ripe tomato, chopped
½ cup sweet onion, chopped
½ cup black beans, drained and rinsed
¼ cup fresh cilantro, chopped
2 tbsp olive oil
juice of one lime
1 clove garlic, minced
salt and pepper to taste

Preparation:
In a small bowl, whisk the olive oil, lime juice, garlic and salt and pepper to taste. In a medium bowl, combine the avocados, tomatoes, onion, black beans, cilantro and the dressing. Gently toss until everything is coated.

Serve immediately.
